The Joy of Zucchinis - Week 2

Zucchini bread in muffin form (thanks, Serena, for the tip).

Stuffed, baked and served with tomato sauce.

Roasted, with whole wheat pasta and feta cheese.

With mushrooms in curry sauce.

And another tart, this time with a little ham in the mix.

LOL! I think they're excellent as muffins!! This past fall for our neighbors I did zucchini, apple and pumpkin. I think I like muffins because unlike bread you can wrap it individually, and let the flavor peak. You can do the same with bread but we don't eat it fast enough and usually wind up throwing some out.

I have a recipe for strawberry bread I'll send to you if you want it.
